An avid reader of the Ingredient Inspector requested a look into what’s on the menu at their alma mater, Tufts University in Massachusetts. (Source for ingredients: Tufts University Dining Web site 7/23)

There are a few items available at Tufts which are Closest To Homemade >> items made with the type of ingredients we would use at home.

Unfortunately, the majority of items on the Tufts University Dining menu for Brunch are Far From Homemade with numerous commercial ingredients Not In Kitchen >> ingredients we would never use at home including Chemical Preservatives, Emulsifying and Thickening Agents, Hydrogenated Oils, commercial Oils, Artificial Flavors and Artificial Colors.

SALAD DRESSINGS: The Salad Dressings at Tufts contain multiple ingredients which we would never use at home to make Salad Dressing including Chemical Preservatives, Soybean Oil, multiple Sweeteners and Water + Gum(s). Those shown here contain 1-4 ingredients banned at Whole Foods. (Source for banned ingredients: Amazon-owned Whole Foods Web site 7/23)

HIGH FRUCTOSE CORN SYRUP IS USED FREQUENTLY IN TUFTS UNIVERSITY DINING SELECTIONS: Many items available at Tufts contain High Fructose Corn Syrup.

SUGAR: Sugar is included in many items at Tufts which traditionally do not include Sugar such as Peanut Butter, Fresh Fruit Salad, Marinara Sauce and Guacamole.

The Closest To Homemade® versions of these items do not include Added Sugar

CHOCOLATE & PEANUT BUTTER PROTEIN SMOOTHIE: Seen below, the Chocolate & Peanut Butter Protein Smoothie with Almond Milk contains multiple ingredients Not In Kitchen™ and nine ingredients banned at Whole Foods:

CHEMICAL PRESERVATIVES: Even simple items such as Chickpea Hummus and Fresh Fruit Salad contain Chemical Preservatives recognized by the U.S. FDA. (Source: U.S. FDA 2023)

WHITE BREAD: Below is a closer look at a seemingly simple food >> White Bread. The Club White Bread at Tufts University contains four ingredients banned at Whole Foods including High Fructose Corn Syrup, Sodium Stearoyl Lactylate, Calcium Propionate and DATEM — a chemical dough conditioner — which stands for Diacetyl Tartaric Acid Ester of Monoglycerides and Diglycerides.
