Ghee is clarified Butter >> Butter with the water evaporated and the milk solids removed so it is almost lactose free. This allows Ghee to have a higher smoke point than plain Butter. This simply means Ghee is better for high heat cooking such as sautéing and grilling. It is also delicious used on items with which we often use Butter such as Mashed Potatoes, Rice and Corn on the Cob. Ghee is traditionally used in Indian cooking.
